Sweet Tater' Chickpea Avocado Chips

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 2 tbsp rosemary
  • 1 large Avocado

Avocado Hummus Topping

  • 1 cup chickpeas canned
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 clove garlic
  • 2 tbsp lime juice


  • slice sweet potatoes
  • toss sweet potatoes and rosemary in olive oil
  • Bake sweet potato at 400°F until tender
  • halve cherry tomatoes.
  • Create hummus avocado spread by mixing chickpeas with oil and garlic and blending in high powered blender for one minute. Add in tahini. Blend again for 1 minute. Add avocado. Blend for 1 minute. Add water until creamy consistency.
  • Top sweet tater chips with hummus avocado spread. Add sliced cherry tomatoes and cilantro.
