Sweet Tater' Chickpea Avocado Chips
- 2 large sweet potatoes
- 2 tbsp olive oil
- 2 tbsp rosemary
- 1 large Avocado
Avocado Hummus Topping
- 1 cup chickpeas canned
- 2 tbsp tahini
- 2 tbsp olive oil
- 1 clove garlic
- 2 tbsp lime juice
- slice sweet potatoes
- toss sweet potatoes and rosemary in olive oil
- Bake sweet potato at 400°F until tender
- halve cherry tomatoes.
- Create hummus avocado spread by mixing chickpeas with oil and garlic and blending in high powered blender for one minute. Add in tahini. Blend again for 1 minute. Add avocado. Blend for 1 minute. Add water until creamy consistency.
- Top sweet tater chips with hummus avocado spread. Add sliced cherry tomatoes and cilantro.
