Welcome to today’s episode of  “I bought one of those giant bulk bags of sweet potatoes with the fantasy of saving a couple bucks.  Now there’s 10 taters 2 days short of sprouting hairs on their spuds!” Never fear, these sweet tater’ chickpea avocado chips are here to save the day and salvage the heap of taters about to go rogue in the pantry.

I’ve got a million things happening in my mind when I buy in bulk. I picture myself orchestrating a beautiful symphony of dozens of new Pinterest worthy entrees, smiling brightly as I pose with each little piece of paradise! In actuality, time passes and meals are never planned.  Leaving the produce soon to pass its prime and my creativity in a real predicament.

Sweet Tater' Chickpea Avocado Chips

Savory sweet potato chips with avocado hummus spread. Perfect for tailgate parties or as an elegant appetizer!

Ingredients

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 2 tbsp rosemary
  • 1 large Avocado

Avocado Hummus Topping

  • 1 cup chickpeas canned
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 clove garlic
  • 2 tbsp lime juice

Instructions

  • slice sweet potatoes
  • toss sweet potatoes and rosemary in olive oil
  • Bake sweet potato at 400°F until tender
  • halve cherry tomatoes.
  • Create hummus avocado spread by mixing chickpeas with oil and garlic and blending in high powered blender for one minute. Add in tahini. Blend again for 1 minute. Add avocado. Blend for 1 minute. Add water until creamy consistency.
  • Top sweet tater chips with hummus avocado spread. Add sliced cherry tomatoes and cilantro.
