For this easy vegan mac and cheese recipe, you will just need a few simple ingredients. We can throw this dish together in a matter of minutes! You will need:

  • Soaked cashews
  • 1 15-oz can of full-fat coconut milk
  • Dijon mustard
  • Nutritional yeast
  • Lime
  • Vegan Macaroni Noodles
  • Apple cider vinegar

Note I’ve used coconut milk in this recipe which adds a creamy flavor but is also slightly sweet.

How Do You Make Vegan Mac Creamy

Several tricks to make this easy vegan mac and cheese creamy include

  • Use cashew
  • Use plant-based milk with a lot of fat such as coconut milk
  • Use reduced oat milk
  • Add cornstarch or tapioca starch to thicken your mac and cheese (or more nutritional yeast)
  • Don’t try to go low-fat

Vegan Mac will last about 3-4 days in the fridge. 

Here are a few things to know about vegan mac and cheese kept in the fridge:

  • As the temperature cools down, you will notice a bit thicker sauce.  
  • Changes in temperature consistency of your coconut milk mac and cheese
  • Adding a small amount of water or fresh coconut milk after refrigeration will restore original consistency

Ingredients

Plant Based Cheese Sauce

  • 1 cup cashews soaked
  • 1 cup nutritional yeast small flakes
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice fresh squeezed
  • ¼ cup mustard dijon or ground
  • 4 cups pasta noodles
  • 1 can coconut milk

Instructions

  • Combine all sauce ingredients. Blend on high 1-2 minutes in a high powered blender.
  • Cook noodles for 10 minutes
  • Add cashew coconut milk mac and cheese sauce to noodles.
